Pasta and Olive Salad

1 – Pound Small Pasta Shapes (elbow, farfalle, penne, etc.)

1 – 2 Cups Central Grocery Olive Salad Olive Salad

Grated Parmigiano Reggiano

Red Pepper Flakes and Additional Olive Oil

Red Pepper Flakes will Add some Heat.

Leave Out if You Prefer Not to Have that.

Cook the pasta according to package directions, making sure it is al dente, never overcook pasta until it is mush. Mix in our Central Grocery Olive Salad. If you are an olive oil snob, add a little more of that extra good oil you are holding back. Toss the pasta to mix well, plate, and garnish with the parmigiano reggiano. Salad is good cold or still warm.

Tips to Make the Perfect Tapenade

Adding a tiny bit (just 1 teaspoon) of maple syrup balances the sour taste from the olives and lemon juice. If you prefer it more sour, you can leave the maple syrup out. Or add it in later if needed, after taste testing. A food processor is the best way to make this tapenade.
